A distinctive feature of modern business entities is the production of not only high-quality products but also in-demand, competitive ones, adapted to current market conditions. The key driver in achieving this goal is the opinions and expectations of the target consumer. Collected and systematically analyzed information on customer opinions, expectations, and preferences regarding the developed values within the framework of the quality function structuring methodology forms the «voice of the customer» and is considered an effective tool for improving an organization's business processes. The authors present a developed matrix of target consumer expectations regarding the key characteristics and properties of a new food product planned for production, formed based on consumer profile modeling and the personalization of individual preferences, needs, and expectations. The obtained results form the basis for a basic process for converting customer feedback, wishes, and requirements into specific technological solutions implemented in an industrial setting.
