In the context of transforming economic relations and shifting consumer demand structures, the issue of optimally balancing basic food products that ensure national food security with the development of value-added related products is particularly important. This paper, based on an analysis of the regulatory framework and statistical data, examines the functioning of food markets across various categories. Specific challenges associated with the sale of products not included in the consumer basket identified, and factors influencing the sustainability of the regional food system analyzed. Practical recommendations formulated for improving state support for producers and optimizing sales activities in the current economic climate. This paper may be of interest to researchers specializing in consumer market development, marketing, and logistics.
